- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 cup crushed chocolate wafer cookies
- 1/2 cup colored candy melts (red or green)
- 12–15 candy eyes
- Heat heavy cream in a saucepan over medium heat until simmering. Pour over the chocolate chips in a bowl and let sit for 5 minutes before stirring until smooth.
- Gradually mix in powdered sugar until silky and thick.
- Cover and refrigerate for about one hour or until firm enough to scoop.
- Use a cookie scoop or hands to form bite-sized balls from the mixture and place on parchment paper.
- Melt colored candy melts according to package instructions. Dip each truffle in the melted candy until fully coated and return to parchment.
- Before coating sets, place candy eyes on top of each truffle.
