  • 1 yellow bell pepper, chopped

  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and peel sweet potatoes; cut into small cubes. Chop onion, bell peppers, and mince garlic.
