  • 1 tsp cumin seeds
  • 1 medium sweet onion, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • Juice of 2 limes

Instructions

  1. Toast guajillo chiles in a dry skillet over medium heat until fragrant (about 2-3 minutes).
  2. Blend toasted chiles with cumin seeds, onion, garlic, and beef broth until smooth to create the marinade.
  3. Marinate chuck roast in the chili mixture for at least 2 hours or overnight in the refrigerator.
