  • 8 oz flat rice noodles
  • 3 tbsp miso paste (red or white)
  • 1 cup mixed fresh vegetables (bell peppers, carrots, snap peas)
  • 2 green onions, sliced thinly
  • 1 tbsp toasted sesame oil
  • 1 cup vegetable broth or water
  • Optional protein: 1 cup cubed firm tofu or cooked chicken
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tsp chili flakes or Sriracha (to taste)

Instructions

  1. Prepare all ingredients by chopping vegetables into bite-sized pieces.
  2. Cook rice noodles in boiling water for about 4-5 minutes until tender but slightly chewy. Drain and set aside.
  3. In a bowl, whisk together miso paste, soy sauce, lime juice, sesame oil, and chili flakes until smooth.
  4. Toss chopped vegetables with the sauce until evenly coated.
  5. Layer the ingredients in mason jars: start with noodles at the bottom, followed by veggies mixed with sauce. If using protein, layer it between noodles and vegetables.
  6. Serve warm and enjoy!
