  • 1 package (10) empanada dough discs
  • 1 cup fresh parsley, chopped
  • ½ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • ½ tsp red pepper flakes

Instructions

  1. In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add bell peppers, garlic, and ground beef; cook until browned.
  2. Stir in cumin and season with salt and pepper; cook for another 3-4 minutes.
  3. Blend parsley, olive oil, red wine vinegar, garlic, and red pepper flakes in a bowl; adjust seasoning to taste.
  4. Place filling onto one side of each dough disc. Brush edges with water and fold over to seal.
  5. Preheat oven to 400°F. Place empanadas on parchment-lined baking sheet, brush tops with egg wash, and bake for 20-25 minutes until golden brown.
