  • 1 cup cooked green or brown lentils
  • 1 cup crumbled feta cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds. Place them cut-side up in a baking dish.
  2. In a skillet over medium heat, heat olive oil. Add diced onions and minced garlic, sautéing until soft (about 5 minutes).
  3. Cook lentils according to package directions until tender (approximately 20-25 minutes). Drain if needed.
  4. Mix cooked lentils with diced tomatoes, cumin, paprika, salt, pepper, and half the feta cheese in a bowl; cook together for an additional 5 minutes.
  5. Stuff each pepper generously with the lentil mixture and top with remaining feta cheese.
  6. Pour a splash of vegetable broth into the baking dish to keep moisture. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 10-15 minutes until tops are golden brown.
