  • 1 cup canned kidney beans (rinsed and drained)
  • 1 cup canned garbanzo beans (rinsed and drained)
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup bell pepper (diced)
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies by washing and cutting the green beans into bite-sized pieces.
  2. Drain and rinse the canned kidney and garbanzo beans under cold water.
  3. Dice the red onion and bell pepper into small pieces.
  4. In a medium bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper until well combined.
  5. In a large mixing bowl, combine all prepared ingredients and pour the dressing over them. Toss gently until evenly coated.
