  • 2 stalks celery, diced

  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1/2 cup pecans or walnuts (optional)

Instructions

  1. Rinse wild rice under cold water. In a pot, combine rice and vegetable broth; bring to a boil. Reduce heat and simmer uncovered for 45-50 minutes until tender.
  2. In a skillet over medium heat, melt butter. Add onion and celery; sauté until softened (5-7 minutes). Stir in crumbled sausage; cook until browned.
  3. Add cranberries and nuts (if using); cook for another 3-4 minutes.
  4. In a large bowl, mix cooked wild rice with the sautéed mixture and fold in thyme and sage.
  5. Preheat oven to 350°F (175°C). Transfer stuffing to a greased baking dish; bake uncovered for about 25-30 minutes until golden brown.
