  • 2 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • 4 large flour tortillas (or corn for gluten-free)
  • 1/2 cup natural peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Allow it to cool before slicing.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, honey (or maple syrup), and sesame oil until smooth.
  3. While the chicken cools, slice the red bell pepper and cucumber into thin strips. Cut the green onions diagonally.
  4. Assemble each wrap by placing sliced chicken in the center of a tortilla. Add veggies and drizzle with peanut sauce.
  5. Fold in the sides of the tortilla and roll tightly from bottom to top. Cut in half for serving.
