  • 2 cups mini marshmallows
  • 1/2 cup brown sugar (light or dark)
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potatoes in salted water until tender, about 15-20 minutes. Drain.
  3. Mash sweet potatoes with melted butter, brown sugar, salt, cinnamon, and nutmeg until smooth.
  4. In a greased baking dish, layer half of the mashed sweet potatoes. Top with half of the mini marshmallows.
  5. Repeat layering with remaining sweet potatoes and marshmallows.
  6. Bake uncovered for 25-30 minutes until marshmallows are golden brown.
