  • 1 cup canned black beans, rinsed and drained
  • ½ cup breadcrumbs
  • 1 tbsp chipotle peppers in adobo sauce

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and peel sweet potatoes, then cut into cubes.
  2. Toss cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  3. Let sweet potatoes cool slightly and then mash in a bowl until smooth.
  4. Mix in black beans, breadcrumbs, garlic powder, and seasoning until well combined.
  5. Form the mixture into small patties (about 2 inches wide) and place on a parchment-lined baking sheet.
  6. For the aioli, combine chipotle peppers, mayonnaise, lemon juice, and garlic powder in a small bowl.
  7. Serve sliders warm with extra aioli on the side.
