  • ½ cup unsalted butter, melted
  • 2 cups fresh strawberries, hulled and divided
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan to form the crust.
  2. In a saucepan over medium heat, combine half of the strawberries with 2 tablespoons of sugar. Cook until soft, about 5 minutes. Puree until smooth and set aside.
  3. In a mixing bowl, beat cream cheese until fluffy. Gradually add sour cream, remaining sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing gently after each addition.
  5. Pour half the cheesecake filling into the crust, drizzle with strawberry puree, then layer with remaining filling. Swirl gently.
  6. Bake for about 60 minutes until set but slightly wobbly in the center. Cool gradually in the oven for an hour before refrigerating.
