  • 2 cups cooked sushi rice
  • 8 oz fresh salmon, chopped
  • 1/4 cup mayonnaise (preferably Japanese)
  • 2 tbsp Sriracha (adjust to spice preference)
  • 2 green onions, chopped
  • 3 nori sheets, cut into strips
  • 1/2 cup panko breadcrumbs
  • 2 tbsp sesame seeds

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine cooked sushi rice with a splash of rice vinegar and sugar until well mixed.
  3. In another bowl, blend chopped salmon with mayonnaise and Sriracha until creamy.
  4. Layer half of the seasoned sushi rice in a baking dish, followed by the salmon mixture, then top with the remaining rice.
  5. Sprinkle panko breadcrumbs and sesame seeds over the top.
  6. Bake for 20-25 minutes until golden brown. Let cool slightly before slicing into squares.
