Scale
  • 14 oz firm tofu, pressed and cubed
  • 2 tbsp vegetable oil
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, grated
  • 1 cup broccoli florets
  • 1/2 cup peanut butter (natural)
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp Sriracha sauce (adjust to taste)
  • Juice of 1 lime
  • 1/4 cup toasted sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)
  • 1/2 cup full-fat coconut milk
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated

Instructions

  1. Prepare the Tofu: Press tofu between paper towels to remove moisture. Cut into cubes.
  2. Sauté the Tofu: Heat vegetable oil in a skillet over medium heat. Add tofu cubes in a single layer and cook until golden brown on all sides (about 10 minutes).
  3. Add Vegetables: Toss in bell peppers, carrots, and broccoli; stir-fry until veggies are tender-crisp (about 5 minutes).
  4. Create the Sauce: In a blender or bowl, combine peanut butter, coconut milk, soy sauce, garlic, ginger, lime juice, and Sriracha. Blend until smooth.
  5. Combine: Pour the peanut sauce over sautéed tofu and vegetables; cook briefly until heated through (about 2 minutes).
  6. Serve: Spoon into bowls and garnish with sesame seeds and green onions.
