  • 2 star anise pods
  • 2 medium yellow onions, chopped

  • 4 cups low-sodium beef broth

  • ¼ cup low-sodium soy sauce
  • 1 tsp black peppercorns
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear until browned on all sides (about 4 minutes per side). Remove from the pot.
  3. Add chopped onions and minced garlic to the pot; cook until onions are translucent (about 5 minutes).
  4. Return the beef to the pot; add sliced carrots, star anise pods, bay leaves, soy sauce, and beef broth until submerged.
  5. Cover tightly and braise in the preheated oven for about 3 hours or until fork-tender.
  6. Once done, remove the beef and let it rest while you strain solids from the gravy into another saucepan. Simmer until thickened.
  7. Serve by slicing or shredding the beef and ladling gravy over it.
