  • 9 no-boil lasagna noodles
  • 1 lb raw large shrimp, peeled and deveined
  • 2 cups fresh baby spinach
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ¼ cup all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Whisk in flour until smooth, then gradually add heavy cream, stirring until thickened.
  3. In another pan, heat olive oil over medium heat. Sauté shrimp with salt until they turn pink (about 3 minutes). Remove from heat.
  4. In a baking dish, spread a layer of white sauce on the bottom. Layer noodles, spinach, shrimp, dollops of ricotta, mozzarella, and more sauce; repeat until ingredients are used.
  5. Cover with foil and bake for 30 minutes. Remove foil, sprinkle Parmesan on top, and bake uncovered for another 10 minutes until golden brown.
  6. Allow to cool slightly before slicing and serving.
