  • 9 lasagna noodles (regular or no-boil)
  • 15 oz ricotta cheese (whole-milk)
  • 2 cups fresh spinach (chopped)
  • 1 lb mixed seafood (shrimp, scallops, crab meat)
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated parmesan cheese
  • 2 garlic cloves (minced)
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a saucepan over medium heat, sauté minced garlic in olive oil until fragrant. Add marinara sauce and oregano; simmer for five minutes.
  3. In a mixing bowl, combine ricotta cheese, spinach, salt, pepper, and half the parmesan; mix well.
  4. Spread a layer of marinara sauce at the bottom of the baking dish. Layer three lasagna noodles side by side, followed by half of the ricotta mixture, half of the mixed seafood, and a layer of mozzarella. Repeat layers until all ingredients are used. Top with remaining marinara sauce and mozzarella.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
  6. Let rest for ten minutes before slicing; garnish with fresh herbs if desired.
