  • 2 fresh salmon fillets (6 oz each)
  • 1 sheet puff pastry (thawed)
  • 2 cups fresh spinach (washed)
  • 4 oz cream cheese (softened)
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 egg (beaten for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium pan, heat olive oil over medium heat and sauté the spinach until wilted, about 3-4 minutes. Season with salt and pepper.
  3. In a bowl, mix the sautéed spinach with cream cheese, dill, lemon juice, salt, and pepper until combined.
  4. Roll out the puff pastry on a floured surface and cut into squares large enough to wrap around the salmon fillet.
  5. Place filling in the center of each square followed by the salmon fillet on top. Fold the pastry over to seal.
  6. Brush the tops with egg wash and bake for 20-25 minutes or until golden brown.
