Roasted Garlic & Herb Stuffed Potato Cups are a delightful twist on traditional stuffed potatoes.   • 4 medium russet potatoes
  • 1 whole bulb of roasted garlic
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash potatoes thoroughly and poke holes in them.
  2. Roast garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and placing alongside potatoes in the oven for about 45 minutes.
  3. In a bowl, combine roasted garlic (squeezed from the skin), sour cream, cheeses, herbs, salt, and pepper until well mixed.
  4. Once potatoes are cool enough to handle, slice them in half lengthwise and scoop out some flesh to create cups.
  5. Mix the scooped potato flesh with the stuffing mixture and fill each potato cup generously.
  6. Return filled potato cups to the oven for an additional 15-20 minutes until golden brown.
