  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • For the Streusel Topping:
  • ½ cup unsalted butter, cold and cubed
  • ½ cup brown sugar, packed
  • 1 tsp cinnamon
  • ½ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix flour, baking powder, cinnamon, granulated sugar, brown sugar, nutmeg, and salt.
  3. In another bowl, whisk together pumpkin puree, eggs, and melted butter until smooth.
  4. Combine wet and dry ingredients gently; do not overmix.
  5. For the streusel topping, mix cold butter with brown sugar, cinnamon, oats, and flour until crumbly.
  6. Pour half the batter into the pan; sprinkle half the streusel on top. Add remaining batter followed by remaining streusel.
  7. Bake for 60–70 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for about ten minutes before transferring to a wire rack.
