  • 2 lbs pork shoulder, cubed
  • 1 can (15 oz) hominy, drained
  • 4 guajillo chiles, toasted
  • 4 cloves garlic, whole
  • 1 medium onion, chopped
  • 2 limes, juiced
  • 1/2 cup cilantro, chopped

Instructions

  1. Toast the guajillo chiles in a dry skillet for about 3 minutes until fragrant.
  2. In a large pot, heat oil over medium-high heat and sauté the chopped onion and minced garlic until soft.
  3. Add the cubed pork shoulder and enough water or broth to cover it. Bring to a boil, then reduce to simmer for 1.5 hours until tender.
