  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ⅓ cup honey
  • 1 tsp pure vanilla extract
  • 1 cup pomegranate seeds (fresh or frozen)
  • ½ cup chopped unsalted pistachios

Instructions

  1. In a bowl, mix graham cracker crumbs with melted butter until it resembles wet sand. Press firmly into the bottom of a greased dish to form an even crust.
  2. In another bowl, blend cream cheese and honey until smooth. Stir in vanilla extract.
  3. Gently fold in half of the pomegranate seeds and chopped pistachios into the cream mixture.
  4. Spread half of the cream mixture over the crust, sprinkle with remaining pomegranate seeds and pistachios, then add the last layer of cream mixture.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  6. Slice into squares and garnish with extra pomegranate seeds and crushed pistachios before serving.
