Instructions

  1. Roast the poblanos: Preheat your oven to broil. Place the poblanos on a baking sheet and broil for 10-15 minutes until charred, turning occasionally.
  2. Steam and peel: Transfer the roasted peppers to a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the charred skin, remove stems and seeds.
  3. Sauté: In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  4. Blend: In a blender, combine peeled poblanos, sautéed onions and garlic, heavy cream, lime juice, salt, and pepper. Blend until smooth.
  5. Heat: Pour the mixture back into the skillet over low heat; warm gently for about 5 minutes while stirring.
