Instructions

  1. Prepare the Dough: Mix flour and salt in a bowl; cut in cold butter until crumbly. Gradually add cold water until smooth. Wrap in plastic and chill for at least an hour.
  2. Laminate the Dough: Roll out chilled dough into a rectangle; pound cold butter into a flat rectangle between parchment sheets. Layer butter onto dough, fold like a letter, and chill again.
  3. Make Pistachio Cream: Blend pistachios into a paste; whip cream until soft peaks form. Fold in powdered sugar and pistachio paste.
  4. Shape Croissants: Roll out laminated dough into triangles; place pistachio cream at base, roll tightly from base to tip.
  5. Bake: Place on lined baking sheet, brush with egg yolk wash, and bake at 375°F (190°C) for 20-25 minutes until golden brown.
