  • 1/4 tsp salt
  • 3/4 cup milk (whole or dairy-free)
  • 1 large egg
  • 2 tbsp melted butter (cooled)
  • 1/2 cup chocolate chips or fresh berries
  • 1/4 cup crispy bacon bits or shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) or heat a non-stick skillet over medium heat.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, mix milk, egg, and melted butter until smooth. Gradually combine wet and dry ingredients; do not overmix.
  3. If baking, grease a mini muffin tin; if using a skillet, lightly oil the surface.
  4. Spoon batter halfway into each muffin cup or into the skillet. Add chosen fillings and top with more batter.
  5. Bake for 12-15 minutes until golden brown; or cook on stovetop until bubbles form before flipping.
  6. Let cool slightly before serving.
