  • 1 medium onion, diced
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until softened (about 2-3 minutes).
  2. Season chicken breasts with salt and pepper. Sear in the pot until golden brown on both sides (about 5 minutes per side). Remove chicken from the pot.
  3. Add chopped bacon to the pot; cook until crispy (around 5-7 minutes).
  4. Stir in rice and pour in chicken broth; bring to a gentle boil while scraping up any bits from the bottom of the pot.
  5. Return the chicken to the pot, ensuring it’s partially submerged in broth. Cover and simmer for 20 minutes or until rice is tender.
  6. Sprinkle shredded cheddar on top; cover again for a few minutes until melted.
