  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups powdered sugar (for frosting)
  • 2 tbsp milk or cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream the softened butter with brown and granulated sugars until fluffy. Add the egg and vanilla; mix well.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Scoop dough onto prepared sheets and bake for 10–12 minutes until edges are golden but centers remain soft.
  6. For the filling, beat powdered sugar with milk or cream until smooth.
  7. Once cookies cool, spread frosting on one cookie half and sandwich with another.
