  • 3 tbsp white miso paste
  • 2 tbsp honey or maple syrup
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the eggplants lengthwise into halves or quarters and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  2. In a bowl, whisk together miso paste, honey or maple syrup, soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger until smooth.
  3. Pat the eggplants dry with a paper towel and generously brush both sides with the miso glaze.
  4. Place the glazed eggplants cut side up on a lined baking sheet and bake for about 25 minutes until golden brown and caramelized.
  5. Sprinkle with sliced green onions before serving warm.
