  • 1/2 cup sour cream
  • 3/4 cup granulated sugar, divided

  • 3 large eggs, at room temperature
  • 1/4 tsp baking powder
  • 1/4 cup casting sugar for topping

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin pan with cupcake liners.
  2. In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press about a tablespoon into each muffin liner.
  3. Beat the cream cheese until smooth; gradually add 1/2 cup granulated sugar, sour cream, and vanilla extract until combined.
  4. Add eggs one at a time, mixing well after each addition; stir in baking powder.
  5. Pour filling into crust-lined cups until three-quarters full and bake for 18-20 minutes until edges are set but centers jiggle slightly.
  6. Cool completely at room temperature before chilling in the fridge for at least 4 hours.
  7. Before serving, sprinkle casting sugar over the top and caramelize with a kitchen torch or under the broiler.
