Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 cup heavy cream
  • 4 oz dark chocolate (for ganache)
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, and baking powder until combined.
  3. In another bowl, beat eggs and granulated sugar until pale and fluffy (about 5 minutes).
  4. Gradually fold in the dry mixture into the egg mixture without deflating it.
  5. Pour the batter evenly into the prepared pan and bake for about 15 minutes or until the cake springs back when touched.
  6. Prepare the cream filling by whipping heavy cream with powdered sugar until soft peaks form.
  7. Once cooled slightly, roll the cake onto a kitchen towel dusted with powdered sugar; then roll it up while warm.
  8. For ganache, melt dark chocolate with heavy cream over low heat until smooth.
  9. Unroll the cake gently, spread whipped cream evenly, then roll it back up tightly and coat with ganache.
