  • Additional crushed Biscoff cookies (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Crush Biscoff cookies into fine crumbs and mix with melted butter.
  2. Spoon about 1 tablespoon of the mixture into each cupcake liner in a muffin tin, pressing down firmly.
  3. Bake crusts for 5-7 minutes until slightly golden. Allow to cool.

  5. Whip heavy cream in another bowl until soft peaks form and gently fold it into the cream cheese mixture.
  6. Spoon or pipe the filling over cooled crusts and top with crushed Biscoff cookies. Chill in the fridge for at least 4 hours before serving.
