  • 1 can (13.5 oz) full-fat coconut milk
  • 4 tbsp Massaman curry paste
  • 2 cups waxy potatoes, peeled and cubed
  • 1 large onion, diced
  • 1/2 cup roasted peanuts
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 cup chicken broth

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the diced onion until translucent.
