  • 1 cup Brussels sprouts, halved

  • 2 tbsp pure maple syrup
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse the quinoa under cold water and cook according to package instructions (about 15 minutes) with water.
  2. While cooking quinoa, chop the carrots, Brussels sprouts, and bell pepper.
  3. In a large bowl, combine the chopped vegetables with olive oil, salt, pepper, and maple syrup. Toss well to coat.
  4. Spread the vegetable mixture on a parchment-lined baking sheet. Roast for 25-30 minutes until golden brown.
