  • 1 cup dried navy beans
  • 4 slices bacon, chopped
  • 1 cup bourbon
  • ½ cup pure maple syrup
  • ½ cup ketchup
  • 1 teaspoon mustard powder
  • 1 onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Soak dried navy beans overnight in water.
  2. Preheat the oven to 325°F (165°C). Drain and rinse soaked beans.
  3. In a large pot over medium heat, cook chopped bacon until crispy. Remove bacon but leave drippings.
  4. Sauté diced onion in the same pot until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  5. Return bacon to pot and add drained beans, bourbon, maple syrup, ketchup, mustard powder, salt, and pepper. Stir well.
  6. Transfer mixture into a baking dish or Dutch oven and cover tightly with foil. Bake for about 2 hours.
  7. Uncover and bake for an additional 30 minutes to thicken.
