Ingredients

Scale
  • 2 lbs boneless pork shoulder
  • 2 medium Granny Smith apples, thinly sliced
  • 4 slices whole grain bread
  • 1 large sweet onion, sliced
  • 2 tbsp apple cider vinegar
  • 2 tbsp whole grain mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C). Season the pork shoulder generously with salt and pepper. Place it in a roasting pan and roast until it reaches an internal temperature of 145°F (63°C), about 4 hours.
  2. While the pork roasts, slice the apples and onion. In a skillet over medium heat, melt butter and sauté them until caramelized, approximately 10-15 minutes.
  3. Whisk together apple cider vinegar and mustard in a small bowl for the sauce.
  4. Once the pork is done cooking, let it rest for 15 minutes before shredding it with two forks.
  5. Layer shredded pork onto one slice of bread, followed by sautéed apples and onions. Drizzle with sauce before placing another slice of bread on top. Cut into halves or quarters.
