Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup raw honey
  • 1/2 cup barbecue sauce
  • 2 cups jasmine rice
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • Pinch of cayenne pepper (optional)

Instructions

  1. Prepare all ingredients by chopping garlic and measuring honey and barbecue sauce.
  2. In a bowl, mix honey, BBQ sauce, soy sauce, garlic, and lime juice. Add chicken breasts and let marinate for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  4. While the chicken cooks, prepare jasmine rice according to package instructions; fluff with a fork once done.
  5. Let the chicken rest briefly before slicing. Pour leftover marinade into the skillet to create a sauce.
  6. Serve fluffy rice topped with sliced chicken and drizzled sauce.
