  • 1 cup cherry tomatoes, halved

  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and halve cherry tomatoes; chop garlic and basil.
  2. Season chicken breasts with salt and pepper.
  3. In an oven-safe skillet over medium-high heat, heat olive oil. Sear chicken for about 5 minutes on each side until golden brown.
  4. Remove chicken and set aside. In the same skillet, add tomatoes and garlic; sauté until fragrant. Stir in balsamic vinegar and Italian seasoning.
  5. Return chicken to skillet and spoon sauce over it. Top with fresh basil.
  6. Bake in the oven for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest before serving.
