  • 1 cup whole wheat breadcrumbs

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Boil the trimmed green beans in salted water for about 5 minutes until bright green and crisp. Drain and set aside.
  3. In a skillet over medium heat, sauté onions in olive oil until translucent (about 6 minutes). Add minced garlic for an additional minute.
  4. In a large bowl, combine boiled green beans, sautéed onions and garlic, cream of mushroom soup, salt, and pepper; mix until well combined.
  5. In another bowl, mix breadcrumbs with Parmesan cheese (or nutritional yeast) and melted butter or olive oil.
  6. Pour the green bean mixture into the prepared baking dish, top with breadcrumb mixture, and bake for 25 minutes until bubbly and golden.
