Ingredients

Scale
  • 3 lbs beef chuck roast
  • 4 cups beef broth
  • 4 crusty French rolls
  • 1 large onion, thinly sliced
  • 8 oz Swiss cheese
  • 2 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Season the beef chuck roast with salt, pepper, garlic powder, and thyme. Sear in olive oil over medium-high heat until browned on all sides (about 4 minutes per side).
  2. Transfer the roast to a slow cooker and pour in enough beef broth to cover two-thirds of the meat. Cook on low for about 8 hours until fork-tender.
  3. In a separate skillet, melt butter and sauté thinly sliced onions until golden brown (about 10 minutes).
  4. Toast French rolls under a broiler until golden brown.
  5. Shred the cooked beef and pile it onto each toasted roll. Top with sautéed onions and Swiss cheese, then broil until cheese is melted.
  6. Serve with warm au jus from the slow cooker for dipping.

Keywords: For extra flavor, let the beef marinate overnight before cooking. Feel free to swap out meats like turkey or pork for variations. For a spicy kick, add jalapeños!
