  • 1 cup crumbled feta cheese
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 medium sweet onion, finely chopped
  • 4 tbsp olive oil (divided)
  • 1/4 tsp red pepper flakes (optional)
  • 2 large eggs, beaten
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, heat 2 tablespoons of olive oil. Sauté the chopped onion until translucent (about 5 minutes). Stir in parsley and dill.
  3. In a mixing bowl, combine sautéed onions with feta cheese, beaten eggs, red pepper flakes, and salt until well mixed.
  4. Carefully unroll phyllo dough; place one sheet on a clean surface and brush lightly with olive oil. Layer three more sheets on top.
  5. Spoon filling along one edge of the phyllo stack and roll it up tightly like a burrito, tucking in the ends as you go.
  6. Place rolled borek seam-side down in the baking dish and brush with remaining olive oil.
  7. Bake for 30-35 minutes or until golden brown.
