Ingredients

Scale
  • 1 lb large peeled shrimp
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the shrimp. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  2. Add shrimp to the skillet in a single layer, season with salt and pepper, and cook for about 2-3 minutes on each side until pink. Remove from the skillet.
  3. In the same skillet, pour in heavy cream while scraping up any bits from the bottom. Stir in sun-dried tomatoes, spinach, Parmesan cheese, and red pepper flakes. Simmer for about 3 minutes.
  4. Return shrimp to the skillet, gently tossing them in the sauce until coated and warmed through.
  5. Serve immediately over pasta or with crusty bread.
