  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups low-sodium chicken broth
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick cooking spray.
  2. Cut the chicken into bite-sized pieces and season with salt and pepper.
  3. In a large bowl, combine uncooked rice, chopped chicken, broccoli florets, cream of chicken soup, garlic powder, onion powder, salt, pepper, chicken broth, and sour cream. Mix well.
  4. Fold in half of the cheddar cheese into the mixture and sprinkle the remaining cheese on top.
  5. Transfer the mixture to the prepared baking dish; cover with aluminum foil and bake for about 45 minutes. Remove foil after 30 minutes to brown the cheese.
