  • 3 ripe bananas (about 1.5 cups mashed)
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tbsp ground cinnamon
  • 1/4 cup brown sugar (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth. Mix in melted butter, sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. In a small bowl, mix brown sugar with an additional tablespoon of cinnamon. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon-sugar mixture on top. Add the remaining batter and finish with the remaining cinnamon-sugar mixture.
  5. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean. Let it cool for ten minutes before transferring it to a wire rack.
