  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp pure maple syrup
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup low-sodium chicken broth
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss sweet potato cubes with olive oil, salt, and pepper. Spread them on one side of a baking dish.
  3. Heat olive oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides until golden brown (about 4-5 minutes).
  4. In a separate bowl, mix chipotle peppers, maple syrup, garlic, chicken broth, and Dijon mustard.
  5. Place the seared pork on top of the sweet potatoes in the baking dish and pour the sauce over both.
  6. Roast in the oven for 25-30 minutes until the pork reaches an internal temperature of 145°F (63°C). Let rest for 10 minutes before slicing.
