  • 2 lbs beef chuck roast, cut into cubes
  • 2 medium sweet onions, chopped
  • 4 cloves garlic, minced
  • 3 large carrots, sliced thickly
  • 2 bell peppers (any color), chopped
  • 1-inch piece ginger, sliced thinly
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides (about 4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (3-4 minutes).
  3. Add carrots, bell peppers, and ginger; cook for another 3 minutes until slightly softened.
  4. Return beef to the pot; pour in soy sauce, rice vinegar, brown sugar, and sesame oil. Add enough water to cover the meat (about 1-2 cups). Stir gently to combine.
  5. Cover with a lid and simmer on low heat for 2-3 hours until beef is fork-tender.
