Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce
  • 8 oz fresh mozzarella cheese, sliced
  • ½ cup fresh basil leaves
  • 4 sub rolls or ciabatta bread (6 inches each)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to about half an inch thick.
  2. Set up a breading station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
  3. Dredge each chicken breast in flour, dip into egg mixture, then coat with panko breadcrumbs.
  4. Heat olive oil in a skillet over medium heat. Fry chicken for about 5 minutes per side until golden brown.
  5. Place fried chicken on a baking sheet, spoon marinara sauce over each piece, and top with mozzarella cheese.
  6. Bake for 10-15 minutes until cheese is bubbly and slightly browned.
  7. Assemble sandwiches by layering fresh basil on split rolls followed by cheesy chicken.
