  • 2 tbsp olive oil
  • 1 cup diced onions
  • 3 cloves fresh garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 cups chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tsp smoked paprika
  • 1 tsp fresh thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 4 tbsp unsalted butter, cold and cut into small pieces
  • ⅔ cup whole milk

Instructions

  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick spray.
  2. In a skillet over medium heat, heat olive oil and sauté onions until translucent. Add minced garlic and cook until fragrant.
  3. Stir in mixed vegetables and cook for about 5 minutes. Add diced chicken and brown on all sides, approximately 7 minutes.
  4. Pour in chicken broth, soy sauce, paprika, thyme, salt, and pepper. Simmer for about 10 minutes.
  5. For the biscuit topping, mix flour, baking powder, and salt in a bowl. Cut in butter until crumbly; gradually mix in milk until just combined.
  6. Pour the chicken mixture into the prepared dish and drop spoonfuls of biscuit dough on top.
  7. Bake uncovered for 25–30 minutes until biscuits are golden brown.
  8. Let cool slightly before serving.
