  • 2 cups fresh kale (chopped)

  • 2 tablespoons olive oil or butter
  • 1 tsp dried sage
  • 1 tsp dried thyme

Instructions

  1. Rinse wild rice under cold water until clear. In a pot, combine wild rice and vegetable broth. Bring to a boil, then reduce heat to low and cover for about 45 minutes until tender.
  2. While the rice cooks, heat olive oil or butter in a skillet over medium heat. Sauté the onion until translucent (around 5 minutes), then add minced garlic and cook for another minute.
  3. Stir in chopped kale and cook until wilted (3-4 minutes).
  4. In a large bowl, mix cooked wild rice with sautéed vegetables, cranberries, chestnuts, sage, thyme, salt, and pepper. Combine thoroughly.
