  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup bell peppers, diced (any color)
  • ½ cup sweet onion, diced
  • 1 tsp cumin powder
  • 2 tsp olive oil
  • Sour cream (optional for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers; sauté until softened, about 5 minutes.
  2. In a bowl, lightly mash the black beans with a fork. Stir in cumin powder.
  3. Lay out one tortilla on a flat surface. Spread half of the mashed beans on one half of the tortilla. Top with sautéed veggies and sprinkle with both cheeses.
  4. Fold the tortilla in half and place it in the skillet over medium heat. Cook until golden brown, about 3-4 minutes per side.
  5. Remove from heat and cut into wedges. Serve hot with sour cream or salsa.
