Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup medium-ground cornmeal
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup finely chopped fresh chives
  • 1 cup whole milk
  • 2 large eggs
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, and salt until well combined.
  3. In another bowl, melt the butter and let it cool slightly. Whisk in the milk and eggs until frothy.
  4. Gradually add the wet ingredients to the dry mixture, folding gently until just combined; lumps are okay.
  5. Fold in the cheddar cheese and chives until evenly distributed.
  6. Divide the batter among muffin cups, filling each about two-thirds full. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before serving warm.
